Please see Food Standard Agency's guidance notes which give you advice about how to comply with food hygiene legislation.
The main piece of legislation which is covered in this guidance is Regulation EC 852/2004 on the hygiene of foodstuffs. The officer who inspects your premises will give you specific advice about how to comply with the law and you won't need to know the whole detail of the regulations.
See also the 'Food safety management and safer food better business' for more information.
