Food Hygiene Rating Scheme

You can view hygiene standards in businesses in Waverley and make informed choices about where to buy and eat food. The rating is not a guide to the business's quality or value.

We run the Food Hygiene Rating Scheme in partnership with the Food Standards Agency (FSA) and this is part of a national scheme.

Businesses covered by the scheme

The scheme covers businesses where customers can eat or buy food such as restaurants, takeaways, cafes, sandwich bars, pubs, hotels, supermarkets or other shops.

Businesses are encouraged to display their rating sticker.

How ratings are calculated

Following a food hygiene inspection by our food safety team, we give the business a rating based on the standards of hygiene at the time. These include:

  • how hygienically the business handles food - safe food preparation, cooking, re-heating, cooling and storage
  • the condition of the premises' structure - cleanliness, repair, layout, lighting, ventilation and other facilities
  • the management of the business including the management system and records being in place to make sure food is safe.

We rate the hygiene standards found at the time of inspection on a scale from 0 (urgent improvement is required) to 5 (the hygiene standards are very good).

Making sure the scheme is fair

The ‘Food Hygiene Rating Scheme’ is a local authority / Food Standards Agency partnership initiative. We follow a process to ensure that the scheme is fair.

As the owner or manager of a business, if your feel your rating is wrong or unfair, you should talk to the Waverley Borough Council Inspector who inspected the business. If you still think the rating is wrong or unfair, you can appeal in writing.

To appeal, download the Food Hygiene Rating Scheme - Appeal form and send it to the Lead Officer for Food from Waverley Borough Council within 21 days (including weekends and bank holidays) of receipt of the notification letter. Contact details are provided with the written notification of your food hygiene rating.

As the owner or manager you also have a 'right to reply' in respect of the food hygiene rating given following your inspection. It allows you to explain actions taken to make the required improvements as detailed in the inspection letter, or if there were unusual circumstances at the time of the inspection and you want to explain this to your customers.

If you wish to use this 'right to reply', please download the Food Hygiene Rating Scheme - Right to reply form (PDF) and return it to the food safety officer that undertook your inspection - contact details are provided with the written notification of your food hygiene rating.  We will publish your comments alongside your rating at food.gov.uk/ratings.

You can request a re-visit for the purposes of re-rating, if you have been awarded a rating of between 0 to 4 and you have taken action to improve food hygiene standards following your last inspection. You will need to do this in writing and supply evidence of improvements made.

You will need to pay a non-refundable fee of £233.10 (VAT exempt). The re-rating visit will be unannounced and will be carried out within three months of receiving the fee. 

The food safety officer will re-assess hygiene standards and give you a new rating. This could go up, but it could stay the same or it could go down.
